Adam Dick and Dustin Taylor became fascinated with the idea of reinventing the chocolate experience. In 2010 they bought some small-scale equipment and began making chocolate.
The most hands-on approach they could take was to start with raw cacao. They then sourced the finest fair-trade cacao and turned the raw ingredients into delicious chocolate in their small factory in Eureka, California. The entire process takes about three weeks, but allows them to make some of the finest chocolate possible. Using organic cacao and cane sugar and not cutting corners in their processes, they are able to leave out vanilla, additional cocoa butter and other emulsifiers in hopes of capturing and highlighting the subtle flavor nuances in the cacao they source from around the world.
