Every Fig is a small universe — a vessel of sap and sweetness, ripened by sunlight. Its flavor is unlike any other: part caramel, part wildflower, part cream. When folded into Balsamic Vinegar, its natural sugars and perfume deepen into something altogether transcendent. The result is a silky, aromatic Balsamic that hums with umami and fruit — equal parts sweet, tangy, and wood-smoked.

First, Trebbiano and Lambrusco grapes are used, the foundation of traditional balsamic, and then fermented slowly with pressed organic Calabrian figs, chosen for their syrupy sweetness and dense flesh. The blend is aged in oak barrels, where time and air work their quiet transformation — softening the bright acidity into a velvety sweetness full of depth.
Drizzle it over grilled peaches, ripe tomatoes, roasted meats, or a slab of aged cheese.

Reduce it gently until it glows like molasses, or finish a dish with just a drop.
Cooked Grape Must*, Wine Vinegar*, Pressed Calabrian Fig Juice.*

In the 1940s, a pair of handsome, determined entrepreneurs arrived in California to build their vision of an earthly paradise high in the hills above Los Angeles.

The Estate’s sprawling garden is now home to over 150 new botanical species, including a vibrant orchard with apples, citrus, plums, pears, avocados, macadamia nuts, olives, and peaches. Together, they provide food and home to a variety of welcome guests, including hummingbirds, owls, butterflies, and bees.
