Store your honey in a dry, dark place at room temperature - no need to refrigerate it! It's also important to keep the jar of honey tightly closed to prevent it from attracting ants and other hungry insects.
Some honeys can crystallize depending on the temperature, and this is completely natural. It's possible to make it more liquid by heating it gently in a bain-marie. Be careful not to overheat it, as this could alter its properties. In the hive, it's 35C, so try not to exceed this temperature.
