Gently heat 6 to 8 ounces whole milk or your preferred non-dairy substitute over medium heat in a heavy saucepan.
Whisk vigorously at first to froth the milk. (Note that some milk substitutes may not froth.)
Heat the milk to 150-170 degrees F, or until you see the first sign of steam begin to rise.
Do not allow the milk to come to a boil.
Remove from heat, add 4 tablespoons hot chocolate mix and allow to sit for several minutes until melted.
Whisk thoroughly and serve.

Variations:
- Substitute 1 to 2 ounces heavy cream in place of milk for a richer beverage.
- Increase chocolate mix or decrease milk for a more intense chocolate flavor.
- To serve chilled, heat the liquid just enough to melt the chocolate, and pour over ice.

As the first and only American-born chef to hold multiple three-star ratings from the prestigious Michelin Guide, Thomas Keller has established a reputation for excellence unparalleled in American cuisine. In Tuscany, Armando Manni has forged a similar reputation for quality by producing super-antioxidant, extra-virgin olive oil.

Together, they have spent the past five years on a unique mission: crafting a chocolate from the bean unlike any we have seen before. They have collaborated with the University of Florence to develop a new methodology to preserve the naturally occurring antioxidants in the cocoa beans. This proprietary process produces delicious, complex chocolate that draws the full potential out of every bean.
